Never owned an "acoustic" baritone guitar, but recently played an Ibanez. IIRC the price tag was $499 and I must say I wasn't impressed with it. Didn't dislike it, but I hung it back up rather quickly. (this was at Guitar Center)

I have a Taylor Baritone 8 string. I love the boom it puts out as well as the octave strings on the center strings. It's a pretty loud instrument acoustically but the bottom end really pops out amplified.
I like it for different voicings but it gets confusing when I'm playing with some folks if they are "neck watchers" and try to play the same chord as I'm playing. Mines tuned b to b so they wind up playing off key. Frustrating at best that!
On the other hand it's once you get used to it the thing is great for solo guitar and voice. The bottom end will really pop out and cover well strumming or fingerpicking. I'm more of a baritone singer so it covers well. But there is something to be said for playing old favorites in a different key. You get chord voicings that escapes you with standard turnings. I haven't tried any of the lower priced offerings but have played a straight baritone in taylors line and found the added octave strings on the 8 string adds a pleasant ring that your miss with the 6 string model.

I like what he was doing at around 3:05 - that was unique and seemed to be an excellent demonstration of this instrument's capabilities (almost a Leo Kottke kind of thing).
