Hi,

Just curious how hard it would be to convert a couple of Fender amps to 230V? I see power transformers for sale, so that bit is easy, but would there be a good reference guide for other changes that may be required?

Not difficult in most cases with the proper import model PT.

Depending on when and where your amp was made, it may already have an unused 230vAC mains input on the power transformer.
