FDP Cookbook : Beverages : Blackberry Cordial (liqueur)

Ingredients

2 qts. fresh blackberries
2/3 - 1c. granulated sugar
1 750 ml bottle of Vodka


Directions

You simply fill two quart sized mason jars with fresh ripe blackberries. Don't smash them down, just fill the jars. Add granulated sugar. I use 1/3 of a cup of sugar per quart. You may prefer 1/2 cup or more. (I don't like it too sweet.) The sugar will sift down through the blackberries. Then you add a fairly good quality vodka. One 750 ml bottle will fill both jars with blackberries and sugar perfectly.

Now wipe off the top rim of the jars of any sugar crystals because you want a real tight seal. Screw the lids on real nice and hand tight.

At this point I put the jars in the corner of the kitchen by the coffee maker so I don't forget to turn the jars over once every day. One day right side up, the next day up side down etc. I do this for at least two weeks.

After two or three weeks of turning the jars every day you simply strain off the liquid from the berries. Use a cheesecloth through a jar funnel if you want. It comes out really pretty and very tasty. like blackberry pie. :D

Don't worry about squeezing the berries. just pour the liquid off and throw the (used) berries away. Otherwise your cordial will be bitter.

Raspberries work real well too.
