FDP Cookbook : Side Dishes : French Onion Soup

Ingredients

1 Medium Yellow Onion (more or less, depending how much onion you like floating in your soup)
2 TblSp Butter (or oil)
3 cans store bought beef broth (or 2 beef and one chicken)
Some stale or dry bread
some mozzarella or provolone cheese (shredded or sliced)


Directions

Melt butter (or oil) in sauce pan. Slice onions and saute in butter. I like to get them a little browned. Add 3 cans of broth, be careful not to splatter the hot fat when cool liquid hits the hot pan. Simmer soup 5-10 mins. Toast bread during this time. The bread can be already stale or dry since you will toast it and float it on the soup anyway. Dish up hot soup. Float toasted bread on soup, sprinkle with cheese. At the table, sink toast in soup and let cheese melt and get gooey. MMMMMM!!!! This soup is way simple to make and is very low in fat. Fat content could be further decreased by boiling onions instead of sauteeing and using low fat cheese.
