Rice (long or short grain - it matters not)
Put the desired amount of uncooked rice into a pot (DO NOT fill pot more than halfway with rice - it will expand while cooking!)
Rinse the rice several times with water - Basically just fill the pot, swish it around and pour out the water.
After rinsing, add water until water level is about 1" over the level of the rice. The tip of your index finger to the first knuckle is about 1" usually.
Bring just to a boil over Medium-high heat. Immediately turn to low heat and cover. DO NOT TOUCH THE LID FOR AT LEAST 20-25 MIN!!! I cannot stress this more - the steam/water needs to absorb into the rice, and liting the lid releases the steam as well as the heat, so just set a timer, and walk away.
After the timer rings, remove from heat - fluff with a fork. You've just made steamed rice!!
