Ingredients
Souffle mixture:
3 cups, baked, mashed sweet potatoes (about 4 large or 5 small)
1/2 cup orange juice
1/2 cup milk
1 tsp. vanilla extract
1/2 cup sugar (okay to cut down if you want it less sweet)
1/2 tsp. salt
3 Tbs. melted butter
cinnamon to taste
Topping mixture:
1/2 cup brown sugar
1/3 cup all-purpose flour
1 cup chopped pecans
3 Tbs. melted butter
optional: minature marshmallows

Directions
Grease a 9"x 9"baking dish.
In a mixing bowl combine souffle mixture ingredients, beat until fluffy and pour into 9"x 9" baking dish.
In a separate bowl combine topping mixture until thoroughly mixed, sprinkle on top of the souffle.
Bake in a 350 degree oven for 35 minutes.
If adding marshmallows, top baked souffle with them, put back in oven and bake until browned.
It's sweet enough, even without marshmallows, to be served for dessert! |
