Ingredients
½ lb - Bacon – chopped up
2 tbsp - Butter
1 - Onion – large, chopped
3 stalks - Celery – chopped
½ lb - Mushrooms – fresh, sliced
½ bunch - Parsley – fresh, chopped
1 cup - Cashew nuts, whole or pieces
1 tsp - Sage
3-4 tbsp - Poultry Seasoning, to taste
½ tsp - Salt
¼ tsp - Black Pepper
¾ loaf - White Bread – stale, cut into cubes

Directions
In a large skillet, fry the chopped bacon until crispy. Place the drained bacon in a large bowl.
With the butter and a little bacon fat in a skillet, sauté the onions, celery and mushrooms until soft, about 10 minutes.
Cool in the skillet for a few minutes, then add to the bacon in the large bowl along with all the remaining ingredients and mix gently.
Stuff turkey with stuffing and roast.
