Directions
preheat oven to 350 degrees
mix together, flour, baking soda, baking powder, and salt. set aside
beat 4 eggs in a large bowl
beat in sugar, oil and cinnamon
mix in carrots, walnuts and raisens
mix in flour mixture
bake in 2 round greased and floured cake pans for 35- 40 minutes, use toothpick to test. It's actually best a little underbaked and slightly puddingny in the center. Cool on rack and remove from pans after 5 minutes.
beat butter in a large bowl
beat in cream cheese
mix in confectionary sugar
mix in vanilla & crushed pineapple
very carefully slice cake layers in half so you have 4 round thin layers. Best to use a long serrated bread knife and keep working around the edges towards the center until seperated. It'll take some care to transport the layers, but don't worry if they break, they get covered with frosting.
spread frosting between each layer and on top (not on sides)
