FDP Cookbook : Side Dishes : Jamaican Rice and Peas (Real Island Style)

Ingredients

1 cup dry Jasmine rice
1 cup bean soaked water
1 stick of Thyme
2 stalks of Scallion (green onion)
6 cloves, whole Garlic
1 can Coconut milk (any kind) ~not water~
1 small package of red kidney beans (gungo peas in Jamaica)


Directions

Soak the beans over night or pressure cook them for 1 hour
Wash the rice
Add 1 cup of the soaked bean water and the can of coconut milk and the beans to a sizable pot. The water will be redish. Water and milk should be about 2 cups or a little more. Good!
Cook rice as directed.
10 min. before rice is done. Lightly crush the scallion stalks and throw them and the garlic and Thyme into the cooking rice.
Complete cooking and there you have the most popular Jamaican side dish on the island. real good with any gravy. Ya mon!
