FDP Cookbook : Misc. : (Former) Texas Governor Ann Richards' Cornbread

Ingredients

1 ½ C. cornbread mix (Jiffy works good)
¾ C. milk
1 egg
½ C. green onion, chopped
½ C. creamed corn
¼ C. chopped jalapeno pepper
¾ C. grated cheese (Cheddar, Monterey Jack or both)
1 Tbl. Sp. sugar
2 Tbl. Sp. oil
Add bacon bits, chopped pimiento, garlic to taste

Directions

Combine all ingredients and mix well. Pour into buttered
baking dish and bake at 425 for about 25 minutes or until done.
This is a wonderful recipe. It is particularly good with, chili, chicken,
or pork and any vegetable.
