Ingredients
2 pounds Shrimp, I.Q.F Large, thawed and chopped
1 pound scallop, small, thawed
8 ounces imitation crab, chopped
8 cups mexican 4 cheese , shredded
16 ounces half and half
8 ounces heavy cream
1 can green chiles, diced
3/4 cup green bell pepper, chopped
1 teaspoon leaf oregano
1/2 cup green onion, chopped
20 each corn tortillas
1/2 cup vegetable oil
1 whole chile gaujillo, torn into small pieces
2 1/2 teaspoons salt |

Directions
1. Combine Salt,White pepper, Cayenne pepper and Oregano in small bowl and set aside.
2. Melt half of the butter and 1 tablespoon of olive oil in a 3 qt sauce pan over medium heat. Add onions,green chiles, bell pepper,half of the minced garlic and 2 1/2 teaspoons off the spice mix. Saute over medium heat for about 10 minutes stirring often.
3. Add the Half and Half and Heavy cream to mixture and bring to a rapid boil, reduce heat to a simmer and cook an additional 10 minutes stirring constantly.
4. Add the Sour cream and beat with a wish until sour cream incorporates.
5. Add 3 cups of the cheese and wish until melted
6. Set sauce aside.
7. In a 4 qt sauce pan add remaining Butter and Olive oil heat melting Butter over medium heat. Add Shrimp,Scallops,remaining seasoning Mix Green onions Gaujillo Chili. Saute About 6-7 Minutes and set aside.
8. Add sauce mixture to the seafood and simmer about 6-10 minutes to incorporate flavors. Remove from heat add imitation crab stir and set aside.
9. Heat Vegetable oil to 325 degrees in a small skillet. Using metal tongs briefly heat each Corn Tortilla about 20 seconds per side remove and drain.
10. Spoon a small amount of sauce into 9x13 baking dish. Try and not spoon any seafood with the sauce when coating bottom of baking dish.
11. Add about 1/3 cup of seafood mixture to each corn tortilla and roll up repeating until all Tortillas are filled.
12. Spoon reminiscing sauce over enchiladas and cover with remaining cheese. Sprinkle with chopped green onions.
13. Bake in a pre-heated 350 degree oven for 30 minutes covered. remove cover and finish under broiler until lightly browned.
