Ingredients
1 lb Dry Sea Scallops
2 Ripe Yellow Mangos
1 Bunch Cilantro
1/2 Red Onion
Olive Oil
Salt
Pepper
Directions
Salsa (Really a Chutney):
Dice Mangos into 1/4 inch squares (add a little sugar to sweeten if you are using Red Mangos)
Add chopped cilantro
Add diced Red Onion
Set aside
Sea Scallops:
Clean Scallops, and remove tough tendon
Coat with olive oil
Season to taste with salt and pepper
Grill over hot coals or high heat until opaque (do not over cook)
Spread salsa on platter, then plate scallops over salsa.
