FDP Cookbook : Desserts : Banana Puddin' Pie (no bake)

Ingredients

Crust
1 1/2 cups very fine graham crackers (about 20-22 squares)
7 tablespoons melted butter
1/3 cup sugar

Filling
3 ripe large bananas
2 small boxes vanilla pudding mix
3 cups milk

Topping
1 regular size Cool Whip


Directions

This recipe is very easy, very delicious, just time consuming.

In a food processor, finely grind the graham crackers. Set aside.

Melt the butter (go ahead, use the real stuff), then add the sugar to the hot butter and stir. The sugar will mostly dissolve but don't worry if it doesn't completely.

In a deep dish 9 inch pie pan, pour in the graham crackers. Add the sweetened butter and stir until all the crackers are moistened. With the back of a large spoon, press the mixture against the bottom and sides of the pan to form a crust. Chill in the fridge for an hour.

Once crust is chilled, slice 2 bananas and arrange along bottom and sides of crust.

Add 1 1/2 cups cold milk to 1 box of the pudding mix in a medium deep bowl. Stir for 2 minutes with a hand blender or until just thickening. Pour over bananas in pie pan.

Slice remaining banana and arrange on top of pudding mix in pie pan.

Add remaining 1 1/2 cups cold mild to last box of the pudding mix in the bowl. Again stir for 2 minutes with the hand blender until just thick. Cover the bananas in the pie pan.

Cover pie with plastic wrap and chill for at least 2 hours.

Serve topped with Cool Whip.
