FDP Cookbook : Entrees : My Dad's Sausage Chowder

Ingredients

OK, this is a nice winter dish or an alternative to chili. Just the right amount of spice and you can make it hotter if you like. Remember it's a chowder so it's more like a chunky soup than a stew.

Sausage Chowder
Ingredients

1/2lb. sweet Italian Sausage
1/2lb. hot Italian Sausage
3-5 fresh carrots
3-5 fresh stalks celery
2 or 3 peeled potatoes
1 medium-sized onion (optional)
2 LARGE (28oz) cans Crushed tomatoes
1 (15oz) can red kidney beans
3-4oz red wine
salt, pepper, oregano and other seasonings to taste


Directions

Brown the sausage together drain off grease and chop into small pieces (I like to just use sausage patties and then just chop them up in the skillet)

Dice up the carrots, celery and potatoes into small pieces. Combine tomatoes, sausage and vegetables, wine & seasonings in pot and cook until vegetables are soft but firm and not mushy. Add kidney beans for last 20-30 minutes cooking.
