FDP Cookbook : Appetizers : Easy Bruschetta

Ingredients

1 loaf good Italian or French bread, sliced diagonally about 1/2 inch
Fresh tomatoes, sliced
Fresh mozzarella, sliced
Extra Virgin Olive Oil
Fresh basil
Black Olives, sliced or chopped (optional)
salt and pepper


Directions

Heat oven to 350F. Depending on size of bread, plan on 2-3 slices per person.

Place bread slices on cookie sheet. Randomly drizzle olive oil across tops, about 1-2 teaspoons per slice, to taste. Barely toast bread for about 5 minutes. You want the bread warm but not crunchy.

While bread is toasting, assemble the rest of the ingredients, finely chopping (chiffanade) the basil

When bread is ready, arrange the slices on a large serving plate or individual plates. Quickly top with mozzarella to cover the bread, then tomato, then a little basil and some black olives. Drizzle about a tablespoon of olive oil over each stack. Salt and pepper to taste.

The fresher the ingredients, the better the bruschetta. Remember to provide napkins as its finger licking good!
